Job Description

Purpose:

The Cook III prepares food items in accordance with production requirements and quality standards while maintaining a safe and sanitary work environment.

Responsibilities:
• In the absence of the Lead Cook, expedites service on the Culinary side
• Maintains knowledge or skill in one station on the line or in Banquet prep (pantry, ceviche, banquets, pastry).
• Cook orders in a timely manner and ensures presentation according to the restaurant's standards. Prepares food of consistent quality following recipe cards and production and portion standards, per dupe from servers.
• Cleans work area throughout shift, including disposal of trash after each shift.
• Follows SOPs for food preparation, ensuring that products are fresh and prepared to restaurant specifications, wearing proper uniform, and using prescribed cost control measures to ensure profitability.
• Maintaining inventory stock by managing deliveries according to kitchen product needs.
• Ensures guest satisfaction by preparing and presenting each dish in accordance to the SOPs, and following up through communication with wait staff.
• Maintains compliance with Health Department guidelines, and ensuring that the kitchen is maintained in a clean and orderly manner. Stores and prepares food in accordance with Health Department temperature standards.
• Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
• Labels dates on food containers and rotate stock per the SOP.
• Check pars for shift use, determine necessary preparation, freezer pull and line set up.
• Notes any out-of-stock items or possible shortages.
• Returns all food items not used on next shift to designed storage areas, being sure to cover/date all perishables.
• Assists in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per SOP.
• Assists in prep work of vegetables and condiments as required for the next shift.

Requirements
• High school education or equivalent
• Two year culinary education preferred
• Minimum two years food service or related work
• Food Handlers Certification required
• Requires strong time management, attention to detail and organizational skills
